<p>Gian Luca Di Stefano is a 43-year-old Roman chef with over two decades of experience in professional kitchens. He began his career at 19 under Chef Carlo Gentili, who shaped his foundational skills and instilled the core values he still upholds with his own team today.</p><p> </p><p>In his early twenties, he honed his expertise in fish cuisine working alongside renowned Chef Massimo Riccioli at the Riccioli Café and the Michelin-starred La Rosetta in Rome. In 2012, he moved to Venice to join Michelin-starred Chef Giovanni Ciresa at the Bauer Hotel, taking on his first major leadership role overseeing a large kitchen brigade.</p><p> </p><p>Since 2016, Gian Luca has also worked as a private chef for individuals in villas and on yachts across Europe, bringing his refined culinary background to bespoke, high-end settings.</p>
